Country Stew Recipe - 5 servings


2 1/2 cups Chicken Broth

9 cloves garlic

1 large white onion, cut into 1 1/2 inch strips

1 large green pepper, cut into 1 1/2 inch strips

3 Italian plum tomatoes or 1 large ripe tomato, cut into 1 1/2 inch strips

2 teaspoons olive oil

1 tablespoons fresh lime juice

2 cups cooked orzo


In a medium stockpot, combine all ingredients except orzo. Simmer 30-40 minutes or until vegetables are just barely tender. Divide orzo among individual soup bowls. Ladle stew over top.
