Beef Broth with Mushrooms Recipe - 3 1-cup servings


1 leek with green tops, finely chopped

3 cups reduced-fat beef broth, preferably homemade

1/2 cup thinly sliced fresh mushrooms

1/2 teaspoon fresh tarragon

1/4 cup finely chopped fresh parsley


Saute leek in a small amount of the broth, add mushrooms and stir over high heat for 1 minute. Add remaining broth and tarragon or thyme. Bring to a boil, cover, reduce heat, and simmer 20 minutes. Just before serving, sprinkle with parsley.
