Beef and Bean Soup Recipe

Beef and Bean Soup Recipe - 6 main-dish servings


1/2 pound leanest ground beef

1 onion, chopped

1 28-ounce can plum tomatoes, with liquid, diced

1 1/2 cups chicken broth, preferably homemade

1 packet Lawry's Taco Seasoning

15-ounce can black beans, drained and rinsed

15-ounce can red kidney beans, drained and rinsed

4-ounce diced green chilies (optional)

2 cups fresh or frozen corn

1 cup black olives, pitted and sliced (optional)


In a nonstick skillet, sauté ground beef and onion. Drain on paper towels, pat with additional paper toweling to remove excess fat. Set aside. In a 2-quart saucepan, combine remaining ingredients and heat through. Add ground beef and heat soup to serving temperature.
