Whipped Cream Topping Recipe

Whipped Cream Topping Recipe - 8 servings


1/2 teaspoon unflavored gelatin

1/4 cup cold water

1/4 cup granulated sugar

3 egg whites

1/4 teaspoon cream of tartar

1 teaspoon vanilla extract


In a small saucepan, soften gelatin in cold water. Stir in sugar. Cook over low heat, stirring constantly, 2-3 minutes, or until mixture is hot (do not boil). In top of a double boiler, using an electric mixer, beat egg whites to stiff peaks. Put pan over boiling water. Add cream of tartar, beat 2 minutes. Rewarm gelatin and pour in a steady stream into egg whites, beating at high speed to stiff peaks, about 1 minute. Pour hot water out of the double-boiler bottom. Fill with ice water. Put top of double boiler over ice water. Add vanilla extract, beat 3 minutes. Serve.
