Tapioca Pudding Recipe

Tapioca Pudding Recipe -6 servings

Ingredients:

1 egg, well beaten

2 1/2 cups nonfat milk

3 tablespoons quick-cooking tapioca

1/4 cup sugar

1 teaspoon vanilla extract

Method:

In a medium saucepan, combine egg, milk, tapioca, and sugar, let stand 5 minutes. Cook tapioca over medium heat, stirring constantly, until mixture comes to a full boil, 6 to 8 minutes. Add vanilla. Stir only enough to mix. Pour into bowl or individual serving cups. Let cool for 20 minutes. Chill.

Variation : For chocolate tapioca, add 3 tablespoons semisweet cocoa powder along with the vanilla to completed recipe.
