Strawberry Sherbet with Strawberry Sauce Recipe

Strawberry Sherbet with Strawberry Sauce Recipe - 1 1/2 quarts


3 egg yolks, beaten

1 cup granulated sugar

3 cups nonfat milk

1/4 teaspoon salt

4 cups fresh strawberries

1 teaspoon vanilla extract


In a 2-quart saucepan, combine egg yolks, 1/2 cup of the sugar, 1 cup of the nonfat milk, and salt. Cook over medium heat, stirring often, until bubbles form around edges, about 15 minutes. Chill at least 4 hours. In a blender or food processor, puree berries. Remove half the pureed berries to a small serving bowl and chill in refrigerator. To remaining pureed berries, add remaining 1/2 cup sugar and whirl 1 minute to blend. Pour chilled egg mixture, sugared berries, vanilla and remaining 2 cups milk into ice-cream freezer. Process according to manufacturer's direction. Serve in bowls. Top with remaining pureed berries.
