Strawberry Shortcake Recipe

Strawberry Shortcake Recipe - 8 servings


8 biscuits made from reduced-fat biscuit mix (such as Bisquick)

4 cups hulled strawberries

2 cups light vanilla ice cream


Prepare biscuit batter according to package directions, let sit 20 minutes. Bake according to package directions. Reserve a few whole berries for garnish. Place remaining berries in a bowl and slightly crush them. Split the still-hot biscuits and put them on individual dessert plates. Add crushed berries and a dollop of ice cream to the bottom half. Cover with the other half. Add more ice cream and crushed berries. Garnish with reserved whole berries.
