Pumpkin Pie Recipe

Pumpkin Pie Recipe - 8 slices


1 9-inch pie shell, prepared from a mix such as Krusteaz

1 1-pound can pumpkin

3/4 cup firmly packed brown sugar

3 lightly beaten eggs

1/4 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon nutmeg

1/4 teaspoon ground cloves

1 12-ounce can evaporated skim milk


Preheat oven to 400oF. Prepare pie shell according to package instructions. Line a 9-inch pie plate with crust. Measure remaining ingredients into a medium mixing bowl. Mix with wire whisk or spoon until well-blended. Pour into pie shell. Cover edges of crust with a 3-inch strip of aluminum foil to prevent excessive browning. Bake for 50 minutes, or until knife inserted in center of pie comes out clean.
