Oatmeal Raisin Cookies Recipe

Oatmeal Raisin Cookies Recipe - 40 cookies


1 1/2 cups sifted, unbleached white flour

1/2 teaspoon baking powder

3/4 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon ginger

1/4 cup brown sugar

1/4 cup granulated sugar

1/3 cup safflower oil

1/2 cup molasses

2 eggs

1 1/2 cups rolled oats

1 cup raisins


In a mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger and sugar. Add safflower oil, molasses, eggs and rolled oats, mix with a wooden spoon until blended. Stir in raisins. Drop batter by heaping teaspoons onto nonstick baking sheet or, for giant-size cookies, drop by 1/4 cup onto nonstick baking sheet. Bake at 350oF, 12-15 minutes. Remove from oven. Let stand 1 minute. Remove from baking sheet. Cool on wire racks.
