Lemon Meringue Pie Recipe

Lemon Meringue Pie Recipe - 10 servings

Ingredients:

1/4 cup all-purpose flour

5 tablespoons cornstarch

1 teaspoon salt

1 1/4 cups granulated sugar

2 1/4 cups boiling water

3 egg yolks, lightly beaten

1/2 cup freshly squeezed lemon juice, plus 1 tablespoon

1 teaspoon lemon zest

1 easy pastry crust, baked

 

Meringue

7 egg whites

1/2 teaspoon cream of tartar

1/2 teaspoon vanilla extract

1/3 cup granulated sugar

Method:

In the top of a double boiler, combine flour, cornstarch, salt, sugar and boiling water. Cook over simmering water 10-15 minutes or until thickened and clear, stirring constantly. Add egg yolks and cook 2 minutes more. Remove from heat. Add lemon juice and lemon zest. Cool. (Do not stir filling while it is cooling). Turn into cooled baked pie shell.

To make meringue, beat egg whites until fluffy. Add cream of tartar and vanilla. Continue beating, gradually adding sugar. Beat until stiff peaks are formed. Spoon meringue over filling. Mound in peaks, covering filling completely. Bake at 400oF 8-12 minutes or until peaks are golden.
