Lemon Ice Recipe

Lemon Ice Recipe - 1 1/2 quarts


2 cups granulated sugar

4 cups water

2 cups fresh lemon juice


In a 3-quart saucepan, combine sugar with 2 cups of the water. Bring to a boil over high heat and continue to boil, uncovered, for 5 minutes. Let cool. Combine lemon juice with remaining 2 cups water. Mix well. Stir into syrup mixture. Chill. Pour into ice cream freezer and process according to manufacturer's directions.

For best flavor and texture, serve within 6 weeks. To serve, let hard frozen ice stand at room temperature until slightly softened before serving.
