Hawaiian Fruit Salad Recipe - 10 servings


1 fresh pineapple

1 cup strawberries, stemmed and halved

1 cup blueberries

1/2 small cantaloupe, peeled and cut into 1-inch cubes

1 papaya, peeled, seeded and cut up

1 cup seedless green grapes

Fresh mint for garnish


Cut pineapple in half horizontally, leaving the stem end intact. Using a curved grapefruit knife, carefully remove pineapple flesh from shell and cut into cubes. Place 1/2 of the pineapple cubes in a salad bowl (reserve remaining half for later use). Add remaining fruit and toss. Transfer fruit to pineapple shells. Garnish with mint.
