Fresh Strawberry Pie Recipe

Fresh Strawberry Pie Recipe - 8 servings


1 9-inch pie shell, prepared from a mix such as Krusteaz

2 quarts big fresh strawberries

3/4 cup granulated sugar

3 tablespoons cornstarch

1/2 cup water

2 cups light vanilla ice cream


Prepare and bake pie shell according to package instruction. Let stand until cool.

Arrange 1 1/2 quarts of the strawberries, pointed tips up, in pie shell. Crush remaining berries. Mix sugar and cornstarch in a 2-quart saucepan. Gradually stir in water and crushed berries. Place pan over medium heat  and cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Pour over berries in pie shell. Chill at least 2 hours. Serve with vanilla ice cream.
