Fresh Strawberry Ice Recipe

Fresh Strawberry Ice Recipe - 4 servings


4 cups hulled strawberries

1 1/2 teaspoons lemon juice

1 1/2 tablespoons sugar


Puree berries in a blender, add lemon juice and sugar and whirl 2 to 3 minutes. Process in an ice-cream freezer according to manufacturer's instructions, or pour into a large bowl and follow the instructions that follow for freezing and beating ices. Pour mixture into a large mixing bowl suitable for freezing. Cover. Freeze 1 to 2 hours, or until solid around edges but still slightly slushy in center. Remove from freezer. Beat with an electric mixer on medium speed until mixture is smooth and no large crystals remain. Cover. Refreeze for 1 hour. Serve at once or refreeze. If frozen, allow mixture to soften for 5 to 10 minutes at room temperature, or for 30 minutes at refrigerator temperature, before serving.
