Chocolate Cake Recipe

Chocolate Cake Recipe - 12 slices


2 eggs, separated

1 1/f cups sugar

1 3/4 cups all-purpose flour

3/4  teaspoon baking soda

3/4 teaspoon salt

1/2 cup safflower oil

1 cup nonfat milk plus 1 tablespoon vinegar

1/4 cup unsweetened cocoa powder

1/2 teaspoon vanilla extract


Beat egg whites until frothy. Gradually beat in 1/2 cup of the sugar, beat until egg whites are stiff. Set aside. In a large mixing bowl, sift together remaining sugar, flour, baking soda, and salt, add oil and half the milk and vinegar. Beat 1 minutes on medium speed, add remaining milk, egg yolks, cocoa powder, and vanilla. Beat 1 minute longer. Fold in egg whites. Pour in 2 nonstick 9-inch round cake pans or 24 paper-lined muffin cups. Bake at 350oF for 30 to 35 minutes, or until a toothpick inserted near the center comes out clean. Cool on wire racks for 10 minutes. Remove from pans. Cool thoroughly on racks.
