Banana Cream Pudding Recipe

Banana Cream Pudding Recipe - 10 servings


3 tablespoons unbleached white flour

3 cups skim milk

1/3 cup granulated sugar

1 egg white, slightly beaten

2 eggs, beaten

1 teaspoon vanilla extract

3 large bananas, sliced

fresh lemon juice


In a covered jar, shake flour and 1/2 cup of the skim milk, set aside. In top of double boiler, combine remaining milk, sugar and eggs. Place over boiling water. Gradually add floured milk. Cook, stirring frequents, 20-25 minutes, or until mixture thickens. Remove from heat. Stir in vanilla extract. Line bottom and sides of a 9-inch pie plate with sliced bananas. Pour pudding over bananas. (To keep bananas from darkening, brush any that show of lemon juice). Chill 2-3 hours.
