Baked Apples Recipe

Baked Apples Recipe - 4 servings


4 tart cooking apples, such as Granny Smith

1/3 cup brown sugar

Zest of 1 orange

1 tablespoon tub-style margarine

1/2 cup dried cranberries or raisins

3/4 cup water

2 tablespoons granulated sugar

4 scoops light vanilla ice cream


Preheat oven to 375oF. Wash apples and remove core to 1/2-inch of the bottom. Arrange apples in an 8 x 8 x 2-inch ovenproof baking dish. Using a fork, combine brown sugar, orange zest and margarine, stir in the cranberries. Fill each apple center with the mixture. In a small container, combine water and granulated sugar, pour around apples. Bake about 30 minutes, or until apples are tender but not mushy. Remove from oven and baste the apples several times with the pan juices. If the juices are thin, remove the apples to individual serving bowls and reduce the pan juices before glazing the apples. Serve warm with ice cream.
