Autumn Fruit Layer Recipe

Autumn Fruit Layer Recipe - 4 servings


450 g Bramley cooking apples

225 g blackberries

50 g soft brown sugar

Juice of 1 lemon

50 g low-fat spread

200 g breadcrumbs

225 g honey-coated nut mix, chopped

Redcurrants and mint leaves, to decorate

Half-fat whipped cream or reduced-fat ice cream, to serve


Peel, core and slice the cooking apples and place in a saucepan with the blackberries, sugar and lemon juice. Cover the fruit mixture and simmer, stirring occasionally for about 15 minutes or until the apples and blackberries have formed into a thick puree. Remove the pan from the heat and allow to cool. Melt the low fat spread in a frying pan and cook the breadcrumbs for 15-10 minutes, stirring occasionally until golden and crisp. Remove the pan from the heat and stir in the nuts. Allow to cool. Alternately layer the fruit puree and breadcrumbs into four tall glasses. Store the desserts in the refrigerator to chill and remove when ready to serve. Decorate with redcurrants and mint leaves and serve with half-fat whipped cream or a reduced-fat vanilla or raspberry ice cream.
