Angel Food Cake with Seven-Minute Icing Recipe - 12 servings


1 box angel food cake mix



2 egg whites

1 1/4 cups granulated sugar

Dash of salt

1/2 cup water

1/4 teaspoon cream of tartar

1 teaspoon vanilla extract


Prepare angel food cake according to package instructions. When cake has thoroughly cooked, prepare frosting. In bottom of a double boiler, bring 2 cups water to a boil. In the top of the double boiler, combine egg whites, sugar, salt, 1/2 cup water, and cream of tartar, bet 1 minute. Place over boiling water. Using highest speed of electric mixer, beat constantly for 5 to 7 minutes, or until frosting stands in stiff peaks. Remove from heat. Stir in vanilla. Spread frosting over top and sides of cake.
