Turkey Meat Loaf Recipe - 8 servingsIngredients: 1/3 cup barley 2 8-ounce cans tomato sauce 1/2 cup water 2 tablespoons dry mustard 3 tablespoons cider vinegar 3/4 pound ground turkey breast 1/3 cup chopped green onions 1 egg 4 cloves garlic, finely minced 1/4 teaspoon black pepper |
Method: In 1 cup of water, soak the barley overnight. Drain. In a small bowl, combine tomato sauce, water, mustard and vinegar. Set aside. Combine barley, ground turkey, green onions, egg, garlic, pepper and 1/2 cup of the sauce. Mix thoroughly. Arrange in a loaf pan. Pour an additional 1/2 cup sauce over top. Bake at 325oF 1 hour. Serve with remaining sauce. |
