Teriyaki Chicken Recipe

Teriyaki Chicken Recipe - 4 servings


2 chicken breasts skinned, boned and cut into 1 1/4-inch cubes

1/4 cup reduced-sodium soy sauce

1/2 cup sake

1 teaspoon granulated sugar

2 teaspoons sesame oil

1 red onion, cut into cubes

1 green pepper, cut into cubes

1/4 pound fresh mushroom buttons

8 cherry tomatoes

1 zucchini, peeled and cut into cubes

Olive oil for grill


Arrange chicken in a shallow dish. In a bowl, combine soy sauce, sake, sugar and sesame oil. Pour marinade over chicken and marinate 30 minutes at room temperature. Drain off marinade and reserve. On skewers, alternate chicken, onion, pepper, mushrooms, tomatoes and zucchini. Prepare coals and brush the grill lightly with olive oil. Grill kabobs 4-6 inches from heat, turning frequently and brushing often, about 20 minutes or until chicken is done.
