Szechuan Chicken Recipe

Szechuan Chicken Recipe - 6 servings


Juice of 1/2 lemon

1 tablespoons green peppercorns

1 tablespoon olive oil

1 teaspoon hot chili oil

1 teaspoon reduced-sodium soy sauce

1 1/2 pounds chicken breast, skinned and boned


In a blender or food processor, combine lemon juice, peppercorns, olive oil, chili oil and soy sauce. Process until peppercorns are crushed. Pour over chicken. Marinade several hours or overnight. Prepare coals. Grill chicken over hot coals 10 minutes. Turn. Baste with marinade. Cook 5-10 minutes, or until chicken is done.
