Southern Fried Chicken Recipe

Southern Fried Chicken Recipe - 4 servings


1 cup low-fat buttermilk

2 whole chicken breasts, skinned, boned and halved

1 cup all-purpose flour

1 1/2 teaspoons salt

1/2 teaspoon pepper

2 teaspoons paprika

2 teaspoons extra-virgin olive oil


Pour buttermilk into an 8 x 8 x 2-inch pan. Dip chicken in buttermilk, turning once to coat. Combine flour, salt, pepper and paprika in a paper bag. Add chicken and shake to coat. In a nonstick skillet over medium-heat, heat olive oil. Add chicken and cook 10-15 minutes, turning chicken frequently to brown evenly. Add 3 tablespoons water and cover. Reduce heat and cook 25 minutes longer. Uncover and cook 5-10 minutes more, or until chicken is tender. Remove to serving platter. Set the skillet aside so that the drippings and brown bits can be used for Old-Fashioned Gravy.
