Roasted Turkey Recipe

Roasted Turkey Recipe - 15 servings


8-10 pounds fresh turkey

Fresh or ground sage to taste

Salt and pepper to taste

3 celery stalks, cut into 2-inch pieces

2 onions, quartered


Rinse inside and outside of turkey with cold water. Rub inside cavity with seasonings. Place celery and onions inside cavity. Skewer neck skin to back, tuck wing tips behind shoulder joints. In a roasting pan, place turkey breast side up on a rack, roast at 325oF. Turkey is done when drumsticks move easily or twist out of joint. A meat thermometer should register 185oF. If turkey browns too quickly, cover it with a cap of aluminum foil. Remove skin before slicing.
