Roast Chicken with Rosemary Recipe - 4 servings


1 roasting chicken, about 3-4 pounds

Powdered rosemary

Black pepper

1 large yellow onion, quartered

3 cloves garlic


Wipe inside of chicken with a damp paper towel, wash outside with cold water. Rub outside of bird and inside cavity with generous amounts of rosemary and black pepper. Put onions and garlic inside cavity. Skewer neck skin to back, tuck wing tips behind shoulder joints. Place chicken breast side up in a shallow roasting pan. Roast at 375oF 60-75 minutes. Let stand 10 minutes before slicing.
