Roast Chicken with Garlic Recipe

Roast Chicken with Garlic Recipe - 1 servings


1 1/2 teaspoons olive oil

3 whole skinned chicken breasts, halved (bone in)

30 garlic cloves (about 3 heads), unpeeled

1 1/4 cups dry white wine

1 1/2 teaspoons fresh rosemary sprigs

1 1/2 teaspoons fresh thyme sprigs

1/4 cup fresh Italian flat-leaf parsley, chopped

Salt and pepper to taste

6 1/4 inch thick slices Tuscan-style bread


In a nonstick skillet, heat the oil. Add chicken and cook over medium high heat 4-5 minutes. Turn chicken, add garlic and cook 4-5 minutes longer, or until garlic cloves begin to brown. Transfer chicken and garlic to an ovenproof baking dish and set aside. Pour the wine into the skillet to deglaze the pan, add rosemary and thyme and pour mixture over chicken. Cover tightly with foil. Bake at 350oF for 30-45 minutes, or until chicken is done. Sprinkle with parsley. Season with salt and pepper, set aside. Under a preheated broiler, toast the Tuscan bread slices until bread is golden brown on each side. Pass bread for dipping with chicken.
