Roast Chicken Asian Style Recipe - 12 servings


1 bunch leaf lettuce

1 roast chicken, thinly sliced

1 bunch green onions with tops

2 tablespoons rice wine vinegar

1/4 cup reduced-sodium soy sauce

2-3 drops of hot chili oil

12 spring roll (lumpia) wrappers

1/4 cup hot Chinese mustard

1/4 cup toasted sesame seeds


Tear lettuce into bite size pieces, arrange on a platter or tray. Layer chicken over lettuce. Slice green onions lengthwise and into 2-inch strips, arrange around edge of lettuce. Combine rice wine vinegar, soy sauce, and hot chili oil in a small bowl, set aside. Wrap spring roll wrappers in a damp paper towel, and steam 1-2 minutes in a microwave or warm in a tortilla warmer. Remove to a napkin-lined basket. Everyone prepares his own. Lay each spring roll wrapper flat. Place a slice of chicken, some lettuce, and green onion lengthwise in center of each wrapper. Fold bottom edge up, left and right sides over, and roll as for crepes. Dip in hot Chinese mustard and sesame seeds and/or soy sauce and rice vinegar.
