Mexican Chicken Recipe

Mexican Chicken Recipe - 4 servings


1/4 cup orange juice

1 tablespoon lime juice

2 teaspoons cider vinegar

1 tablespoon olive oil

1/2 teaspoon oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

2 chicken breasts, skinned, boned and quartered


Prepare marinade by combining orange juice, lime juice, vinegar, olive oil and seasonings. Pour over chicken and marinate in the refrigerator at least 2 hours. Drain, reserving marinade. Prepare coals and cover the grill with foil. Grill chicken over hot coals 10-20 minutes on each side or until chicken is cooked. Baste frequently with reserved marinade during cooking.
