Maple-Roasted Squab Chicken Recipe - 4 servings


4 squab chickens

4 rosemary sprigs

4 garlic cloves, peeled and lightly crushed

2 tablespoons maple syrup

1 tablespoon Dijon mustard

2 teaspoons olive oil

Freshly ground black pepper


Preheat the oven to 400oF. Stuff the chicken cavities with the rosemary and garlic, then loosely tie up the legs with kitchen string. In a small bowl, mix together the maple syrup, mustard, olive oil, and some black pepper. Place the chickens in a roasting pan and pour the maple syrup glaze over them. Roast for 40-50 minutes, basting occasionally, until golden and cooked through. Serve with hot new potatoes and a crisp salad or green vegetable.
