Maple-Roasted Squab Chicken Recipe - 4 servingsIngredients: 4 squab chickens 4 rosemary sprigs 4 garlic cloves, peeled and lightly crushed 2 tablespoons maple syrup 1 tablespoon Dijon mustard 2 teaspoons olive oil Freshly ground black pepper |

Method: Preheat the oven to 400oF. Stuff the chicken cavities with the rosemary and garlic, then loosely tie up the legs with kitchen string. In a small bowl, mix together the maple syrup, mustard, olive oil, and some black pepper. Place the chickens in a roasting pan and pour the maple syrup glaze over them. Roast for 40-50 minutes, basting occasionally, until golden and cooked through. Serve with hot new potatoes and a crisp salad or green vegetable. |
