Grilled Herbed Chicken Breasts Recipe - 4 servings


2 tablespoons extra-virgin olive oil

1 tablespoon fresh lemon juice

1 tablespoon minced fresh thyme

1/2 tablespoon minced fresh rosemary

3/4 teaspoon salt

1/2 teaspoon pepper

2 whole skinned and boned chicken breasts


In an 8 x 8 x 2-inch Pyrex casserole, combine olive oil, lemon juice, thyme, rosemary, salt and pepper. Add chicken breasts and turn chicken over in the marinade so both sides are coated. Marinate 10 minutes. Heat the grill. When coals are ready, grill chicken breasts about 5 minutes on each side, or until chicken is cooked. When chicken is done, it will feel firm to the touch but not hard.
