Ginger-Flavored Chicken Recipe - 4 servings


2 whole chicken breasts

1 celery stalk with leaves, chopped

1 small onion, chopped

1 carrot, sliced

Piece of fresh ginger


Remove skin from chicken breasts, bone if desired. Place chicken in a small stockpot, add celery, onion, carrot and a piece of fresh ginger. Add enough cold water to cover by 2 inches, bring to a boil. Cook 10-20 minutes or until chicken is tender and no sign of pink remains, do not overcook.
