Chicken Tostadas Recipe

Chicken Tostadas Recipe - 6 servings


2 chicken breasts, skinned and boned

2 cups Chicken Broth

1 1/2 teaspoons ground cumin

3/4 teaspoon chili powder

8-ounce can tomato sauce

1/4 teaspoon salt

1/8 teaspoon black pepper

1 small onion, diced

1 large tomato, diced

3 cups shredded lettuce

1/2 cup shredded low-fat cheddar or part-skim mozzarella cheese

6 8-inch flour tortillas, warmed

1 cup Black Bean Dip


In a 2-quart saucepan, bring chicken and chicken broth to boiling. Reduce heat and simmer 20 minutes or until chicken is done. Remove chicken from broth. Dice and sprinkle with 1/2 teaspoon of the cumin and 1/2 teaspoon of the chili powder. In a small saucepan, combine tomato sauce, the remaining teaspoon of cumin, the remaining 1/4 teaspoon chili powder, salt and pepper, and warm over low heat. Arrange chicken, onion, tomato, lettuce and cheese on a serving platter. Place warm tortillas in a napkin-lined basket, and put tomato sauce and Black Bean Dip into serving bowls. To assemble, have each person spread a tortilla with bean dip, sprinkle with chicken, and sauce and then lettuce, tomato, onion and cheese.
