Chicken with Rice Recipe

Chicken with Rice Recipe - 6 servings


2 teaspoons olive oil

1 large onion, chopped

4 cloves garlic, minced

1/4 cup all-purpose flour

1 teaspoon cayenne pepper

2 chicken breasts, skinned, boned, halved and cut into quarters

16-ounce can plum Italian tomatoes, chopped

2 3/4 cups Chicken Broth

1/8 teaspoon powdered saffron

1/2 teaspoon salt or to taste

1 1/3 cups uncooked long-grain rice

1 1/2 cups cooked peas


In a skillet, heat olive oil. Add onion and garlic, and saute 6-8 minutes or until onion is just tender. Combine flour and cayenne. Dredge chicken in flour mixture. Add to skillet and brown 2-3 minutes on each side. Add tomatoes, chicken broth, saffron and salt, and bring to a boil. Stir in rice. Cover and simmer 30-45 minutes or until rice is tender and chicken is cooked. Stir in peas. Serve at once.
