Chicken Piccata Recipe

Chicken Piccata Recipe - 4 servings


1 tablespoon olive oil

2 very thin whole chicken breasts, skinned, boned and halved

Juice of 1 lemon

1/4 cup dry white wine

1 lemon, thinly sliced

Black pepper


In a nonstick skillet, heat oil. Add chicken and saute over medium high heat 10 minutes. Turn and cook 10 minutes. Reduce heat to simmer. Cook 5 minutes longer on each side, or until chicken is nearly done. Pour lemon juice over chicken. Cook 5 minutes. Remove chicken to heated plates. Add wine to the pan and deglaze over high heat 2-3 minutes, stirring constantly. Pour wine over chicken. Top each piece of chicken with lemon slices. Sprinkle with black pepper.
