Chicken Parmesan Recipe

Chicken Parmesan Recipe - 4 servings


1 cup oyster crackers or saltines

1/4 cup freshly grated Parmesan cheese

2 tablespoons finely chopped parsley

1/2 teaspoon ground thyme

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1/2 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon pepper

2 whole skinned and boned chicken breasts, halved

1 teaspoon olive oil

1/2 cup low fat (1%) buttermilk


Put the oyster crackers in a gallon or jumbo size zip lock plastic bag and crush them with your hands or a rolling pin. Add Parmesan cheese and seasonings. Shake the bag to combine the ingredients. Brush chicken with olive oil, dip in buttermilk and place in the plastic bag, shake bag until chicken pieces are evenly coated with seasonings. Put chicken in a nonstick pan and bake at 400oF for 30 minutes. Reduce heat to 350oF and bake 10 minutes longer, or until chicken is tender.
