Chicken with Fresh Spinach Recipe - 6 servingsIngredients: 3 whole chicken breasts, skinned and boned 1 tablespoon ginger juice 1 tablespoon sake 1/2 cup fresh lemon juice 2 cups chicken broth, preferably homemade 1/4 cup all-purpose flour 1/2 cup water 2 tablespoons potato starch 6 cups fresh spinach torn into bite-size pieces |
Method: Cut chicken into cubes. Sprinkle with ginger juice and sake. Let stand 10 minutes. Combine lemon juice and broth in a medium saucepan, reserve 1/3 cup and set aside. Heat remainder to boiling. Shake flour and water in a covered jar to form a smooth paste, gradually add to boiling broth, stirring constantly until thick. Reduce heat and let simmer 5-10 minutes. Sprinkle chicken with potato starch. Heat reserved broth in a wok or heavy skillet, stir fry chicken. Toss spinach with chicken. Transfer to serving plates, pour sauce over. |
