Chicken Curry Recipe

Chicken Curry Recipe - 8 servings


1/2 cup chopped onion

2 cups chicken broth, preferably homemade

2 cups nonfat milk

1/2 cup all-purpose flour

1/2 teaspoon salt

1 tablespoon curry powder

1/4 teaspoon ground ginger

1 tablespoon lemon juice

4 cups cubed cooked chicken breast

8-ounce can sliced water chestnuts

6 cups steamed rice

1/4 cup raisins for garnish

2/3 cup pineapple chunks for garnish


Saute onion in a small amount of chicken broth until tender, add remaining broth. Bring to a boil. Shake milk and flour in a covered jar to form a smooth paste, gradually add to boiling broth, stirring constantly until thick. Add seasonings. Pour lemon juice over chicken, add to broth. Stir in water chestnuts. Heat. Serve over steamed rice. If desired, garnish with raisins and pineapple chunks.
