Barbecued Turkey Recipe

Barbecued Turkey Recipe - 15 servings


8-12 pound turkey

Fresh or dried sage to taste

Pepper to taste

Garlic powder to taste

Salt to taste

2 celery stalks, chopped

1 large onion, chopped

2 teaspoons olive oil


Wipe inside of turkey with a damp paper towel, wash outside with cold water. Rub inside cavity with seasonings. Place celery and onion inside cavity. Skewer neck skin to back, tuck wing tips behind shoulder joints. Rub outside of turkey with olive oil. Place 25 briquets on each side of barbecue kettle. When coals are ready, put in drip pan. Put turkey in roast holder and position on grill. Every hour add 8 briquets per side. For a 12-pound turkey, allow 2 1/2 hours cooking time, for a 20-pound turkey, allow 11 minutes per pound. Remove skin before slicing.
