Barbecued Chicken Italian Style Recipe - 6 servings


1 cup oil-free Italian dressing

2 tablespoons Dijon mustard

1/4 cup dry white wine

3 whole skinless chicken breasts

1/2 pound fresh mushrooms

2 onions, quartered

2 tomatoes, halved


Combine dressing, mustard, and wine. Arrange chicken in a bowl separate from the vegetables. Pour half the dressing over the chicken and the other half over the vegetables. Marinate each 2 hours in the refrigerator. Alternate mushrooms, onions, and tomatoes on 6-inch skewers or toothpicks. When coals are ready, arrange chicken on barbeque, grill 20 minutes. Turn, grill 20 minutes longer. Turn, add vegetables. Grill 10 minutes, or until chicken is tender and vegetables are hot. Baste chicken and vegetables frequently with the marinade during cooking.
