Tortellini and Tomatoes Recipe - 4-cup servings


3 dozen Spinach Tortellini

1 recipe Pesto or Garlic Vinaigrette

1 box cherry tomatoes

1/2 cup freshly grated Parmesan cheese


Cook the tortellini in boiling water according to the instruction. Drain and while still hot, toss with pesto or vinaigrette. Wash the tomatoes, pat dry and remove stems. Toss tomatoes with pasta and pesto or vinaigrette and Parmesan cheese.
