Spaghetti with Meatless Sauce Recipe

Spaghetti with Meatless Sauce Recipe - 16 servings


28-ounce can plum tomatoes

28-ounce can tomato puree

12-ounce can tomato paste

8-ounce can tomato sauce

3 cups water

1 1/2 teaspoons salt

2 tablespoons chopped fresh basil leaves

1 1/2 tablespoons minced fresh oregano leaves

2 pounds spaghetti or corkscrew-shaped pasta

Fresh basil sprigs for garnish

Crushed red pepper (optional)


In a food processor, puree tomatoes until smooth, transfer to a stockpot. Add canned tomato puree, tomato paste, tomato sauce, water, salt, basil and oregano. Stir thoroughly to combine ingredients. Heat sauce just to boiling (do not allow to boil). Reduce to a simmer.


One half-hour before serving, cook pasta according to package directions. Drain and transfer to a pasta bowl. Pour one cup of sauce over the top just enough for color. Garnish with sprigs of fresh basil. Accompany with crushed red pepper, if desired.
