Soba Noodles with Chicken and Vegetables Recipe

Soba Noodles with Chicken and Vegetables Recipe - 8 servings


1 tablespoon sesame oil

1 whole chicken breast, skinned, boned and diced

1 tablespoon minced fresh ginger

5 garlic cloves, minced

5 cups broccoli florets

1/2 cups snow peas

1 bunch green onions, chopped

1/3 cup reduced-sodium soy sauce

1/3 cup dry sherry

1 tablespoon olive oil

2 tablespoons rice wine vinegar

3/4 drops hot chili oil

2 8-ounce packages soba noodles


Heat sesame oil in a nonstick skillet or wok. Add chicken and stir fry 2 to 3 minutes. Add ginger, garlic, broccoli, snow peas, and green onion, and stir fry 2-3 minutes longer. Meanwhile, combine soy sauce, sherry, olive oil, rice vinegar, and hot chili oil. Pour over chicken and vegetables, cook 30 seconds longer. Remove wok from heat. Add noodles. Toss.
