Seafood Linguine with Pesto Recipe

Seafood Linguine with Pesto Recipe - 8 servings


1 pound linguine

1/4 cup dry white wine, vermouth or broth

1/2 pound orange roughy, halibut or red snapper

cut into 2-inch pieces

1/2 pound scallops, poached

1 cup Pesto

1/2 pound clams in shells, steamed

1/2 pound mussels in shells, steamed

1/3 cup freshly grated Parmesan cheese


Cook linguine, set aside. In a nonstick skillet, heat wine, vermouth or broth. Add whitefish and scallops. Cover and poach 4-6 minutes, or until done. Toss linguine with pesto. Arrange in a shallow paella-type dish. Garnish with seafood and sprinkle with Parmesan cheese.
