Penne with Shrimps, Olives and Tomatoes Recipe

Penne with Shrimps, Olives and Tomatoes Recipe - 10 servings


2 teaspoons Garlic Olive Oil

1 pound large shrimps, shelled and deveined

1/4 cup olive oil

2 tablespoons balsamic vinegar

3 large garlic cloves

1 teaspoon salt

1/2 teaspoon pepper

3 cups fresh basil leaves

1 pound penne or other tube-shaped pasta, cooked al dente

1 1/2 pounds ripe tomatoes, cut into 1-inch cubes

1 cup kalamata olives, pitted and halved


In a nonstick skillet over medium-high heat, heat Garlic Olive Oil, add shrimps and cook 5-6 minutes, or until shrimps are cooked. Remove from heat. In a blender, combine olive oil, vinegar, garlic, salt, pepper and 2 cups of the basil, whirl 1 minute. Pour over penne while pasta is still warm. Add tomatoes and olives, toss. Add shrimps, toss again. Garnish with remaining basil leaves.
