Pasta RecipesPasta has long been popular and is now available in a vast range of shapes and sizes, both fresh and dried. Fresh pasta can always be substituted for dried in any recipe, but needs cooking for only 2-3 minutes, instead of about 10. There are no hard and fast rules on which shape of pasta to serve with which sauce, but generally speaking you should match a robust sauce with a chunky pasta and a delicate sauce with a slender pasta. Again, the best test for when it is done is the taste test. Pasta is cooked when it is al dente - just tender but with a hint of bite. |
