Pasta Primavera Recipe

Pasta Primavera Recipe - 6 servings



1 1/4 cups fresh basil leaves

2 large garlic cloves, peeled

1/4 teaspoon salt

2 tablespoons pine nuts

1/4 cup extra-virgin olive oil


1/2 pound rotini

6 1/2-ounce jar marinated artichoke hearts, drained

2 cups broccoli florets

2 cups cauliflower florets

3/4 cups thinly sliced baby carrots

1 1/2 cups diced plum tomatoes


Combine basil, garlic, salt and pine nuts in a food processor and process until fairly smooth, 2-3 minutes. With machine running, add olive oil one tablespoon at a time. Process until oil is incorporated and mixture is smooth, 2-3 minutes longer. In a large pot of boiling water, cook pasta according to package directions. Drain. While pasta is still hot, toss it with artichokes, including their marinade. Add broccoli, cauliflower and carrots. Add basil and toss. Add tomatoes and toss again.
