Pasta with Pesto and Tomatoes Recipe

Pasta with Pesto and Tomatoes Recipe - 8 servings


1 cup loosely packed fresh basil leaves

3-4 garlic cloves

1/4 cup freshly squeezed lemon juice

1/3 cup pine nuts

1/2 teaspoon salt

1/4 teaspoon pepper

1 pound rotelli, cooked al dente

3 large fresh ripe tomatoes, diced

1/4 cup freshly grated Parmesan cheese


In a food processor, combine basil, garlic, lemon juice, pine nuts, salt and pepper, whirl 1-2 minutes, or until basil and garlic are coarsely chopped. Pour over pasta. Add tomatoes and toss. Transfer to pasta bowls. Sprinkle with Parmesan cheese.
