Orzo with Steamed Vegetables Recipe

Orzo with Steamed Vegetables Recipe - 8 servings


1 bunch fresh asparagus

1/2 bunch fresh broccoli florets

1/3 head cauliflower florets

1 1/2 cups snow peas

1 pound orzo, cooked al dente

1 English cucumber, peeled, halved and sliced

2 tablespoons reduced-sodium soy sauce


Separately steam asparagus, broccoli, cauliflower, and snow peas in a microwave or in a vegetable steamer rack over boiling water for 2-3 minutes, or until just crisp-tender. Arrange orzo in a casserole dish. Toss with steamed vegetables. Sprinkle cucumber over top. Add soy sauce and toss lightly.
