Linguine with Calamari Recipe

Linguine with Calamari Recipe - 8 servings


1 1/2 pounds squid

1 cup white wine

2 garlic cloves

1 pound linguine, cooked al dente

1/4 cup olive oil

Juice of 1 lemon

1/2 teaspoon salt

1/4 teaspoon pepper

3 ripe tomatoes, coarsely chopped

2 tablespoons chopped fresh parsley


Thoroughly wash squid, split and remove cartilage, eyes and ink sacs. Heat wine and garlic in a wok or heavy skillet. Saute squid for 3 to 5 minutes, or just until color changes and squid become tender, do not overcook of squid will become rubbery. Drain off liquid. Arrange squid over pasta, sprinkle with olive oil, lemon juice, salt, pepper, tomatoes and parsley. Toss until squid and linguine are well coated.
