Skewered Beef Kebabs Recipe - 4 servingsIngredients: 1 tablespoon olive oil 1/4 cup red wine vinegar 1/2 cup dry red wine 1 garlic clove, minced 1/4 teaspoon pepper 1 pound extra-lean round steak, cut into 1-inch cubes 3/4 pound fresh mushrooms 12 cherry tomatoes 12 artichoke hearts 1 white onion, cut into 2-inch cubes 2 green peppers, seeded and quartered lengthwise |

Method: Combine oil, vinegar, wine, garlic, and pepper, pour over meat and vegetables. Cover. Chill 1-4 hours. Drain. Alternate meat and vegetables on skewers. Grill over medium hot coals or broil 4-6 inches from heat, basting frequently and turning often, until beef is done. |
